Great Mexican Recipe - Spicy Mexican Chorizo Zucchini Frittata

Here's a great Mexican brunch / breakfast recipe for the weekend.

It's a Spicy Mexican Chorizo Zucchini Frittata.

My father and mother, Pablo and Phyllis, owned a few Mexican food restaurants when I was in my teens so I developed a love and taste for spicy Mexican food.

By the way, if you are in the Atlanta, GA area, my favorite burritos are the chicken burritos at the El Torero Restaurant on Peachtree Parkway in the Peachtree Corners area.

Eating this may not help you to learn Spanish but it may help give you the zest and energy you need to do so. The recipe below is from the good people over at Muy Bueno Cookbook.

INGREDIENTS:

1/3 cup pork chorizo, casings removed
2 tablespoons extra-virgin olive oil
1/2 small red onion, thinly sliced
1 serrano, thinly sliced
1 zucchini, thinly sliced
1 cup fresh corn kernels
1/8 teaspoon salt
¼ teaspoon dried Mexican oregano
8 large eggs
